Heat with a tablespoon of sugar and balance with salt and vinegar. Add remaining ingredients for flavour and colour; put in a sterile jar and refrigerate overnight before serving. As the point of this dish is to have a fresh sweet-and-sour flavour, shallots should not be sauteed. All vegetables should keep a bit of a crunch.
