Lapis Legit Lapis Legit, also known as "spekkoek" is a kind of cake made of a flour and egg batter. Normally spekkoek is yellow and brown in colour. Spekkoek can be decorated and served as cake for special occasions. Recipe Ingredients: 350 gr butter 350 gr caster sugar 30 egg yolks 2 tbsp milk powder 1 tbsp wheat flour 1 tsp spekkoek spices* (* 1 tbsp cinnamon 1/2 tsp nutmeg 1/2 tsp clove 1/2 tsp cardamom ) 1/4 tsp vanilla extract Method: 1. Whisk butter, sugar and vanilla with a mixer for half an hour. Leave to rest. 2. Combine milk powder, wheat flour and spekkoek spices. 3. Whisk egg yolks with a mixer for 1/2 hour. 4. Add combined ingredients (see no. 2) to the egg yolks, fold in with a wooden spoon. 5. Fold in the mix of butter, sugar and vanilla into the egg yolk mix. Fold in with a wooden spoon until even. Now that the batter is done: 6. Pour 2 tbsp of batter into an 18x18 cm mould. 7. Put in the oven, using lower heat for about 2 minutes. 8. Once dry (test with a skewer or toothpick), add another 2 tbsp of batter. Continue this with lower heat for 3 or 4 layers. From then on, use upper heat until batter runs out. Tips: Tips : 1. Make the butter/sugar/vanilla mix at night, leave to rest until the morning. 2. Pay attention to the power of the mixer. If your mixer can handle only 10 eggs, the result will be better when using 2 mixers if you have them. 3. When mixing all ingredients, don't stir to much so that the batter remains light. Likewise DON'T mix the batter while waiting so that it doesn't collapse. 4. Preheat the oven before starting to whisk the eggs, so that it is at a stable temperature once we start baking.
